Spicy Black Bean Soup

Ingredients

* 2 cans black beans
* 1 can chicken broth
* 2 NY Spicy Sausages (from Costco)
* 3 celery sticks, chopped
* 1 medium onion, diced
* 3 cloves garlic, diced
* 1 chipotle pepper, diced
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* a few drops tabasco sauce

Directions

Saute sausages in a saute pan on medium-high heat for 30 mninutes, turning often. Chop them into bite size pieces and set aside.

Saute onion, celery and garlic in a large stock pot. Add black beans, chicken broth, sausages and chipotle pepper. Bring to a boil. Reduce heat and simmer for 30 minutes. Add salt, pepper and tobasco.

Cuban Black Beans and Rice

Ingredients

* 3 tablespoons vegetable oil
* 1/2 cup ham, diced
* 1 cup onion, diced
* 3 cloves garlic, minced
* 1/2 cup tomatoes sauce
* 1 can chicken broth
* 2 cups long grain rice
* 1 teaspoon cumin
* 1 teaspoon oregano
* 1/2 teaspoon pepper
* 2 cans black beans, drained
* 1 bay leaf
* 1/2 cup bell pepper, diced

Directions

Heat oil in a Dutch Oven over medium-high heat. Add ham. Saute for 1 minute. Add onion and garlic. Saute for 2 minutes. Stir in tomato sauce and broth. Bring to a boil. Add rice, cumin, oregano, pepper, black beans and bay leaf. Bring to a boil. Cover, reduce heat and simmer 20 minutes, stirring occaisionally. Discard bay leaf. Sprinkle each serving with bell pepper.

Cuban Black Bean Soup

Ingredients

* 2 tablespoons vegetable oil
* 1 medium onion, diced
* 2 celery stalks, sliced
* 4 cloves garlic, minced
* 3 cans black beans
* 1 can chicken broth
* 2 tablespoons canned diced jalapenos
* 1 ham hock
* salt to taste

Directions

Heat oil in a stock pot over medium high heat. Saute onion and celery for 3-5 minutes. Add garlic and saute for an additional 2 minutes. Add black beans, chicken broth, jalapenos and ham hock. Bring to a boil, then cover and simmer for 30 minutes.

Remove ham hock. Slice off any extra ham from the bone, dice and put back into soup. Salt to taste.

Black Bean Salad

Ingredients

* 1 tomato, chopped
* 2 tablespoons fresh cilantro, chopped
* 1/2 cup red onion, diced
* 1 teaspoon salt
* 1 teaspoon vegetable oil
* 1 can black beans, drained

Directions

Mix all ingredients together.

Black Beans and Rice

Ingredients

Rice
* 1 teaspoon vegetable oil
* 1 1/2 cups uncooked long grain rice
* 1/2 teaspoon ground turmeric
* 1/2 teaspoon cumin
* 3 1/3 cups water
* 1/2 teaspoon kosher salt
* 1 cup frozen corn, thawed
* 1/2 cup cucumber, peeled, seeded and chopped
* 1/2 cup green onion, chopped
* 1/2 cup bell pepper, seeded and chopped
* 1/4 cup cilantro, chopped
* 1 tablespoon jalapeno, minced
* 1 can black beans, rinsed and drained

Dressing
* 1 teaspoon cumin
* 6 tablespoons fresh lime juice
* 3 tablespoons vegetable oil
* 2 tablespoons water
* 1/2 teaspoon kosher salt
* 1 clove garlic, minced

Topping
* 2 cups plum tomatoes, wedged
* 1 tablespoon fresh lime juice
* 1/8 teaspoon kosher salt

Directions

RICE: Heat 1 teaspoon oil in large nonstic skillet over medium heat. Add rice, cook 1 minute. Add turmeric, cumin, water and salt, bring to a boil. Cover, reduce heat and simmer for 25 minutes. Remove from heat, uncover and cool to room temperature. Add corn, cucumber, bell pepper, green onions, cilantro, jalapeno and black beans.

DRESSING: Heat 1 teapoon cumin in a small nonstick skillet over low heat for 30 seconds or just until fragrant. Remove from heat. Stir in lime juice, vegetable oil, water, kosher salt and garlic. Stir into rice mixture.

TOPPING: Combine tomato, lime juice and salt. Spoon over rice mixture.
