* 1 tablespoon olive oil
* 1/2 medium onion, diced
* 1 pound beef
* 1/2 cup dark beer
* 3 teaspoons cumin
* 1 teaspoon basil
* 2 teaspoons cayenne pepper
* 2 teaspoons chili pepper
* 2 cans beans (S&W chili beans with chipotle pepper are good)
* 1 can diced tomatoes
* 1 can tomato paste


In a large stock pot over medium-high heat, saute the onions in olive oil. Add beef and brown. Once the meat is browned add beer and simmer for 15 minutes. Add cumin, basil, cayenne pepper and chili pepper. Add beans, tomatoes and tomato paste. Bring to a boil, reduce heat and simmer for 1 1/2 to 2 hours.
