Chicken Corn Chowder

Ingredients

* 2 tablespoons butter
* 1/4 cup onion, diced
* 1/4 cup celery, minced
* 1/4 cup red pepper, diced (optional)
* 1 chipotle pepper or jalapeno, seeded and minced
* 2 tablespoons flour
* 3 cups milk
* 1/2 can chicken broth
* 2 cups cooked chicken, chopped
* 2 cans sweet corn
* 1/4 teaspoon dried thyme
* 1/4 teaspoon pepper
* 1/8 teaspoon salt

Directions

In a large stock pot over medium-high heat, saute onion, celery, pepper (optional) and chipotle or jalapeno for 3 minutes. Add flour. Cook 1 minute. Stir in milk, chicken, corn, thyme, salt and pepper. Bring to a boil, then simmer for 15 minutes. Add chicken broth and cook for 5 minutes longer.
