Broccoli and Cheese Soup

* 1 cup onion, diced
* 2 cloves garlic, diced
* 3 cups chicken broth
* 1 16-oz. package broccoli florets
* 2 1/2 cups milk
* 1/3 cup flour
* 1/4 teaspoon pepper
* 8 ounces cheddar


Heat a large nonstick saucepan over medium high heat. Add onion and garlic and saute for 3 minutes. Add chicken broth and broccoli. Bring to a boil, reduce heat and simmer for 10 minutes. Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes, stirring constantly. Stir in pepper. Remove from heat. Add cheese, stirring until cheese melts. Place 1/3 of the soup in a food processor and process until smooth. Return to pan.
